Chia puddings are one of those very rare things that are really healthy but actually feel like a treat. Different to other healthy snacks they are not only easy but very fast to make. So there is no excuse to make not make these.
If you have seen chia pudding in the supermarket you know that they are generally quite pricey. But there is no need to spend the extra money when they are so simple to make at home
If you read my recent blog on chia seeds you know that I am a huge fan of chia seeds. (If you didn’t read it you can do so here) They are incredibly healthy for such a little seed and you don't have to struggle to incorporate them into your diet. It’s as easy as adding them to your drinking water, I like doing so with a couple drop of lemon and some mint leaves, but just water will do.
This recipe is a little different from most since it works better when you add your own touch and personal favourites to it. I will try to give you a general idea.
Milk (I think almond milk works best, pure coconut milk gets really hard in the fridge)
Fruit (of your choice) You can also add your favourite raw protein powder.
Honey (if you are having a sugar craving)
You can make as much of this as you want, it’s just important to remember: 1 part chia seeds to 3 part milk (or water).
1. Blend you ‘milk’ of choice with the fruit. Reserve some of the fruit to top your puddings.
2. Add honey.
3. In a bowl mix in the chia seeds.
4. Leave in the bowl or separate into smaller bowls.
5. Put in the fridge and leave overnight.
6. Decorate with leftover fruit. (this is where you can get creative)
If you want to try a more summery approach try infusing water with tea and using instead of the milk supplement. A few mint leaves help give it some extra freshness.
