Thai Cucumber Salad

Thailand might just be my favourite place and certainly, Thai food is probably my all time favourite! This light cucumber salad is really simple and full of flavour.

It can be eaten on its own or it makes an excellent addition to many main dishes. I often bring this with me to BBQ’s where it seems to go with almost anything. You could even use it as a Thai inspired salsa to eat with some baked maize tortilla chips.

The main ingredient for this salad is cucumber. In Traditional Chinese Medicine, cucumber is cooling and sweet in flavour. It quenches thirst, moistens the lungs and purifies the skin. Absolutely perfect for clearing ‘summer heat’ too. The juice can be used to relieve burns- especially sunburn.

Cucumbers are so refreshing and watery that this salad makes the perfect summer snack. I personally like to make it really spicy too. Most people don’t know that chillies can actually help you regulate your body temperature which may be part of why they are so popular in hotter countries. 

This is super simple to make and is full of flavour! I’m sure it will become a staple in your house! 

Ingredients

  • 2 cucumbers 
  • 1 banana shallot 
  • 1/2 cup peanuts 
  • 2 red chillies 
  • 2 tablespoons of soy sauce
  • handful of coriander 
  • lime juice to taste

Method

1 Half the banana shallot and slice very thinly. Place in a large mixing bowl.

2  Slice the chillies and throw them in with the shallots. Then squeeze the juice of both lemons. This will allow the shallot to cook in the lemon juice and the chillies to loosen up. To the mixture add a couple of dashes of soy sauce. 

3 Peel and seed the cucumber and then cut into small squares. Add to the onion and chillies mixture. 

4 Chop both the coriander and the peanuts then add to the mix. 

5 Mix well, let it sit for 30 mins and enjoy!
